Cheese:
We love cheese. Its what we savor each night, makes us exercise when we wake up in the mornings, and what inspired us to initially pursue this dream. Cheese is now the cornerstone of Cured. It is rare to come across a cheese one of us doesn’t like, and in deciding upon the 80 you’ll find on the counter at Cured, we were like kids in a candy store.
Cheesemaking in America is at a place like never before and some of the finest cheeses in the world are made on our home soils. With the growth of artisanal American cheese in the last five years and such an abundance of delicious offerings, we even debated going all-American at one point…Then quickly realized that if it is simply wrong to not have a chunk of parm and a runny epoisses on hand at all times.
As a living and breathing thing, cheese doesn’t like to travel far. By focusing on American cheeses, we have the opportunity, in Boulder, Colorado, to have a fresh cheese the day after it was made, or a soft cheese just off the farm .
We spent last fall traveling the country, visiting with those on the forefront of the American cheese movement. Our 2.5 months and 10,000 miles sadly killed our car, but the people we met, friends we made, cheeses we tasted, and wealth of products we can now bring to Cured could have come no other way.
Cheese is seasonal, and frequently the best cheeses are made only in smaller quantities. This means that Cured’s offerings will constantly rotate, following seasons and availability from farms On top of the staples, Cured will offer cheese from over 35 farms not currently available in Colorado; many of them not otherwise available beyond local farmers markets or visits to the farm. All our cheeses will be in whole wheels and hand-cut to order.
Take a look through the glass walls of our cheese-aging cave, an endeavor that enables us to bring each cheese to its happy place, showcases each ones unique ripeness and flavor. Nothing we have will rest smothered with plastic-wrap, and you will taste the difference.
